Grilled or Roasted Vegetable FlatbreadServes 2 - 4
- 2 flatbreads (8 inches each)
- ½ cup Garden Fresh Gourmet™ Roasted Red Pepper Hummus
- 1 yellow squash, roasted or grilled, diced
- 1 zucchini, roasted or grilled, diced
- 1 cup mozzarella cheese
- 1 tablespoon fresh basil, chopped finely
Toast flatbreads in 400 degree oven for 5-7 minutes. Using a spatula or knife, spread Garden Fresh Gourmet Roasted Red Pepper Hummus evenly across the two flatbreads. Top with vegetables and mozzarella cheese. Toast in oven for about 5 minutes or until the cheese is bubbly and melted. Cut in half or quarters and garnish with chopped fresh basil.
